Sundried Tomato & Cheese Turkey Cups

Ingredients

  • 1 large egg

  • 1 pounds ground turkey breast

  • ¼ cup sun-dried tomatoes

  • 1 tbsp dried basil

  • ¼ cup Asiago cheese, shredded fine

  • ½ of a medium sized onion, diced small

  • 2 cloves of garlic, minced

  • Salt and pepper, to taste

Directions

  1. Preheat oven to 400° F.

  2. Beat the egg in a large mixing bowl. Add the egg and all ingredients to a bowl.

  3. Mix everything together with your hands until evenly combined.

  4. Grease a muffin tin with cooking spray. Add the turkey mixture among the muffin cups, tightly pressing the mixture in. 1lb of ground turkey yields around 9 cups.

  5. Bake until the turkey is cooked through, 25 to 30 minutes or until it reaches an internal temperature of 165° F.

Tip - Serve with sauteed spinach and mushrooms for a healthy meal.
